I've been crocheting for over 30 years, and come from a family of yarn and fabric artisans. I learned to sew from my Grandmother who made several quilts a year entirely by hand...one for each child, grandchild, and great-grandchild. Life situations and changes caused me to take a chance and open my first Etsy shop in Feb. 2011. A few successful months later, I opened my second Etsy shop as BeccaTheBaker...and later in 2011 opened my third Etsy shop as BeyondCrochetToo. I'm a single mother of 2 teenagers (a girl and a boy), plus 2 cats. I'm a 5th generation Native Californian (Northern California. And am happy to be back on the West Coast in the Pacific Northwest where I belong.

Birthday Fun and Dessert

Yesterday (May 28th) was my daughter's 18th birthday. :D

We started the day out with Starbuck's for Frappucinos. - Both of us had to have the new Mocha Coconut....with double coconut flavor! If you haven't had these yet, I HIGHLY recommend them. They're good the regular way, but I really like the difference the extra shot of coconut makes. Yum! Yum!

After the coffee, it was off to the game store where she picked out some of her birthday presents. Then later in the evening we went and saw the new Thor movie. - Here is where I have a confession to make, one of those get to know me better moments: I am a Marvel Superhero fanatic!! ....Okay, Okay!! I'm a Marvel Geek! Is that better??

I don't really know where it started. I didn't read comic books growing up, but most of my male friends did and would always talk about the stories in them. Guess I retained the info. But, somehow I became a walking encyclopedia of basic Marvel knowledge. So, needless to say: I was more than willing to go see Thor with my kids. (And the next XMen movie, Green Lantern, Captain America, and OMG!! The Avengers). Thor is awesome by the way - I highly recommend it, whether you're a Marvel fan or not. Great action/adventure movie!!

We ended the evening with dinner at our favorite Chinese Buffet here in Kissimmee. Then home for her birthday dessert. We're kind of non-traditionalists in the sense that we don't always have birthday cake as our birthday dessert. For the past 2 years my daughter Lizz has picked the following instead, and I wanted to share it with all of you. Think of it as a thank you for all the kind words, and support you all have given me. Hope you like it as much as my family does. :)

Layered Strawberry Cheesecake Bowl

What You Need

3 cups sliced fresh strawberries
3 Tbsp.  sugar
2 pkg. (8 oz. each) PHILADELPHIA Neufchatel Cheese, softened
1-1/2 cups  cold milk
1 pkg. (3.4 oz.) JELL-O Vanilla Flavor Instant Pudding
2 cups  thawed COOL WHIP LITE Whipped Topping, divided
2 cups frozen pound cake cubes (1 inch)
1 square  BAKER'S Semi-Sweet Chocolate

Make It

COMBINE berries and sugar. Refrigerate until ready to use. Beat Neufchatel in large bowl with mixer until creamy. Gradually beat in milk. Add dry pudding mix; mix well. Blend in 1-1/2 cups COOL WHIP; spoon half into 2-1/2-qt. bowl.

TOP with cake, berries and remaining Neufchatel mixture. Refrigerate 4 hours.

MELT chocolate; drizzle over trifle. Top with remaining COOL WHIP.
